This easy, no bake tart Chocolate Caramel Heart Tart for Valentines Day or any day consists of a press in crumb crust, homemade caramel and the same truffle filling we used at the bakery to make our truffles.
You won’t believe how easy the basketweave is to make and it gives such an elegant appearance to this special dessert.
This is a short class which emphasizes the ease with which this can be made.
Don’t have a heart shaped pan? The Chocolate Caramel Tart fits perfectly in a 9x3/4 tart pan with a removable bottom.

January 22, 2022 will feature Creative Croissants where I’ll show you a much faster way to make this laminated dough with no worries about butter blocks and breakthrough.
The St. Louis Post-Dispatch extolled the virtues of this method in a two page article titled, “Quicker Croissants, Why take three days when you can make crisp, buttery croissants in just four hours?” The article ended with, “The result is croissants that are simply spectacular. They’re light, they’re crisp, they’re delicate and they’re the perfect blend of thin pastry and butter.”
In additon to the rolls, you’ll learn to make Chocolate Croissant and then turn them in a marvelous Chocolate Pecan Croissant Coffeecake as well as Montrachet Cheese Pastries with a zippy Apricot Ginger Sauce.

Meringues have been a source of uncertainty to many when it comes to baking. And they really needn’t be. What kinds are they? How do they differ? Where are they used? Can you overbeat them? Why use an acid when making them? Why does the weather matter? How to minimize cracking when drying.
This class is going to answer all of these questions and more. Meringue is one of the easiest of all baking and pastry base recipes. There is so much that can be done with it from buttercreams to cookies to fillings, toppings, and more.
Light and airy with a melt-in-your-mouth texture, meringues can be flavored (but where and when is of utmost importance), colored or left snow white. They are easy to make and last indefinitely in a closed tin. And don’t forget they are gluten free if that is a concern.
This class focuses on:
· Types of meringue and their uses
· Lemon Meringue Pie – meringue part only. This Answers the question: "How do you keep meringue from weeping or pulling away from the sides of a pie after it is baked?
· Meringue Shells also known as Pavlova which can be filled with curds,
Ice cream or whipped cream and fresh fruit.
· Spanish Windtorte - a gorgeous meringue case to be filled with whatever your heart desires
