This class features three cakes each with its own filling and frosting.   In this class you will learn to finish cakes with chocolate ganache, Italian buttercream and whipped cream.  The cakes will feature fillings of pastry cream, truffle filling and an easy to make American strawberry buttercream which tastes very much of strawberries.  The cake recipes are not demonstrated but the recipes are included.

This is a demonstration class.

Boston Cream Pie– despite the name it is a cake and quite a cake at that.  Two layers of butter sponge cake are brushed with a rum wash and filled with a foolproof pastry cream.  It is then undercoated, glazed with chocolate ganache and finished with sliced almonds.

Chocolate Raspberry Truffle Cake– This was one of the wedding cakes we made at the bakery.  Four layers of chocolate cake, filled with raspberry and chocolate truffle filling.  It will be finished, as we did at the bakery, with an Italian Buttercream.

Strawberry Shortcake– A white cake is filled with an American Strawberry buttercream and finished with whipped cream.

Class limit: 20 students.
